Homemade Mayo and Weekly Challenge #1

Good morning! Happy Sunday:) I will be in church this morning, then a church potluck, then a flute concert. Pretty fun day:)

I thought I would start this Sunday off with a very yummy sauce that my aunt, mom, and grandma make. It is another delicious Whole30 recipe. Put it on hamburgers or fish or chicken, in tuna salad or chicken salad…this stuff is honestly so good.

Recipe for homemade Mayo

-2 eggs
-1/4 cup lemon juice
-1 tsp salt
-1 tsp ground mustard
-approximately 2 cups of extra light olive oil (not extra virgin) **add more olive oil until it reaches the consistency you want.**

Blend (using an immersion blender) eggs, juice, salt, and mustard. Keep blending as you add the olive oil.


Ok, so to go along with a recipe today, I wanted to tell you about my first eating goal. I started this a couple of weeks ago. I eat only good things until lunch. I eat a good breakfast and usually one good snack. By good I mean healthy. I don’t mean good chocolate or good chips. 🙂


Each week I am going to try to have a ‘Weekly Challenge’. Maybe at some point I will come up with a cute name for them. Any ideas? This week is eat only healthy food until lunch. I hope you all will try it with me!
