Like I said in another post, my traditional Easter dish is the Jello. This year I chose to make a peaches and cream Jello in a Bundt pan. I have kind of a funny story about it…but that comes at the end. I found this recipe at the Jello Mold Mistress of Brooklyn. I’ll put it into my own words here:)
2 (3 ounce) packages of peach flavored gelatin
3 1/2 cups boiling water
1 1/4 cups cold water
3/4 cup cold water
2 cups peaches, sliced and pealed, or drained canned peaches
2 tablespoons (2 envelopes) of unflavored gelatin powder
1 1/2 cups (14 ounce can) sweetened condensed milk
What to do
Empty the packages of peach Jello into a bowl. Pour in 2 cups boiling water and stir until all the powder is dissolved. Stir in 3/4 cups of cold water. Put that bowl into the fridge until thickened but not fully set. Make sure that you drain the peaches well if you use canned peaches. Place slices of peach in the bottom of the Bundt pan. Make sure to keep some of them for later. Take the peach jello out of the fridge and carefully pour/spoon it over the peaches. Refrigerate that until set but not completely.
While that is setting, sprinkle the unflavored gelatin over top of 1/2 cup of cold water. Let the gelatin soak up the water. Once it is soaked up, pour 1 1/2 cups boiling water over top. Stir until dissolved. Pour in the sweetened condensed milk until it is smooth. It will take a few moments before the mixture isn’t gooey. Keep stirring! Cut up the rest of the peaches and stir them into the condensed milk bowl. Refrigerate it until thickened.
When the peach Jello is ready, carefully pour the condensed milk mixture over top. Put the whole thing in the fridge until completely set. Unmold it when set and enjoy!
I did it overnight and served it in the afternoon. Here is where the funny story comes in:) When I was ready to unmold it, we set it in hot water for about a minute. It came out of the pan easily…too easily. The hot water melted the inside! The creamy layer started to separate from the peach part and it started to slide off of the plate. We put it back in the fridge. When we took it out, it still slid. I quickly got a picture, and we dumped it into a bowl.
All of us enjoyed it, but next time I won’t keep it in the water for so long. Also, I will make the water warm…not hot:)
