I promised you the strawberry pie recipe I made and here it is. Before we get to that though, I would like to update you on my workout status. I am currently caught up with the 30 day challenge. I have to admit, though, I slacked off for a couple of days. Last night, I had a long workout ending with 20 minutes of yoga. Pheww! I’m back:)
Little workout tip for you that I developed last night. Ok, if any of you do jumping jacks as a regular workout, do you get dizzy just by watching the world go up and down? I do! I figured out that if I watch myself in a mirror, I don’t get sick! Its because the thing-me- that I am watching is moving with me. The wall stays in place so it is like getting car sick. So next time you do jumping jacks, watch yourself in the mirror. I would love to see how it works for other people. As a bonus, you can see if you are jumping in the right form:)
And now onto the incredibly unhealthy strawberry cream pie complete with pictures. I love it though:)
1 quart strawberries sliced –I couldn’t find fresh berries so I used 1 1/2 can strawberry pie filling)
1 (13.5 oz) package strawberry glaze –if you use pie filling, you don’t need the glaze
1 (4 oz) package cream cheese, softened
1/2 cup powdered sugar
1/4 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 cup heavy whipping cream
Stir strawberries with glaze in a bowl and place in refrigerator to chill.
Stir cream cheese, confectioners’ sugar, cinnamon, and vanilla extract together in a bowl.
Beat cream in a separate bowl with an electric mixer just until it begins to thicken
add cream cheese mixture and continue beating until thick
Pour cream mixture into baked pie crust
Top with strawberry mixture. Chill at least 1 hour before serving.
