Hello there! I have a yummy recipe for you today. This is my go to breakfast now. Yummy, salty (when you use bacon!), and quick. What a wonderful breakfast for a school morning! It takes 30 seconds to heat up in the microwave, unless you like it really hot, then 45 seconds. Either way, it is less than a minute before you can get your hands on one of these super healthy egg cups. This time I took tons of pictures for you:) Ever since my aunt Ann introduced the rest of our family to the Whole30, we have had such delicious but healthy food! Anyway, here is the recipe!
1 c frozen spinach, squeezed dry (or whatever amount you want)
assortment of veggies (we use frozen mixed bell peppers and onions, and diced fresh mushrooms)
1 can coconut milk
salt, pepper, other herbs/spices
several slices of bacon, cooked

What to do:
In a large bowl mix the coconut milk until smooth. Add the eggs, spinach, and salt, pepper, and/or additional spices to taste. Set aside.
In a large skillet sauté the peppers and mushrooms until the liquid has evaporated. Let cool, then add to the egg mixture.
Place bacon in the bottom of the muffin tins and fill with egg mixture.
Bake at 350 degrees for 30-35 minutes, or until set.
